Paco Guzmán, head chef and owner of this gorgeous tapas restaurant in the heart of the Borne district, is at the heart of what makes it such an experience. His enthusiasm for his restaurant and commitment to seriously good food has led to a city-wide reputation and an imminent second restaurant. Although very reasonably priced, Santa Maria has become a magnet for the beautiful and culinary-minded in this city, drawn by the cosy, romantic atmosphere (despite the bare-bulb lighting) and excellent food. It's permanently busy due to its immense popularity, fantastically creative tapas and diminutive proportions so you'd be wise to get there as early as possible as Guzmán doesn't take bookings for parties of less than six. Larger parties get their own room in the downstairs of this delectable, old building, home also to Guzman's frog collection which he'll happily tell you all about. The menu doesn't change often - because is doesn't need to - Guzman has managed to pare it down to some very popular dishes that bring happy customers back time and again, for the food, the atmosphere and the friendly service.
